Recipe Archive



Welcome!  This is a collection of recipes that I have made... some of them are Diva Originals (conceived and created by yours truly...) and some of them I have taken from other fabulous cooks and am just passing them on to you.  I can't promise they are all gourmet... but I CAN and DO promise that they are all healthy and satisfying meals for you to serve your family!

Breakfast
Bacon Egg Cups- These were yummy! I over filled mine a bit, so they weren't as pretty as the pic, but they tasted great!  Also, I used turkey bacon.
Flower Power Eggs-  These were fun & pretty!
Refrigerator Oatmeal-  There are numerous benefits to eating uncooked oats.  These recipes let you do so while making you think you are getting away with something sinful!  ;o)  DH and I have this for breakfast at least once a week!  The chocolate banana one is our favorite!
Weekend Brunch Casserole-  The entire family LOVED THIS! I made it the morning after Thanksgiving for some added interest to the big pancake breakfast we always do. I put refrigerated shredded hash-browns on the bottom instead of the crescent rolls to make it gluten free.
Dinner

Baked Tilapia With Balsamic Browned Butter Glaze-  A family favorite! The beautiful thing about this recipe is it is SO simple! And only has 5 ingredients. Perfect for a quick, easy, healthy weeknight dinner!
Beef & Bean Taco Casserole- This was a simple recipe that delivered BIG flavor.  I changed it up just a bit, by seasoning the ground beef with fajita seasoning and garlic salt instead of the taco seasoning that the recipe calls for, because Little Diva and Little Man don't care for the flavor of taco seasoning.   Besides that I followed the recipe exactly and it was fantastic!
Brown Sugar Garlic Chicken-  This came out REALLY good. Who knew garlic and brown sugar would pair so well?!


Diva-lish Italian Stuffed Chicken with Parmesan Cream Sauce- A Diva Original Dish!  It's an Italian take on Chicken Cordon Bleu.  Pretty much a flavor explosion that will have you proclaiming "Molto Bene!"
Kaytucky Chicken-  Chicken filled with cream cheese, onion & bacon...I altered the recipe... or just left part of it off, actually. The recipe calls for the chicken to be wrapped in flake pastry and then baked. Not my idea of healthy, and we are all about healthier eating. So i just stuffed and baked it. It was FABULOUS!!
Meatloaf Muffins With BBQ Sauce-  The kids loved these! I made mine with some shredded cheese worked into the meat. Also, cook time was more like 25 mins instead of 15. :) 
Philly Cheesesteak Stuffed Peppers- Quick...Easy....Cheap! Best of all... yummy and healthy!  We loved these!
Mexican Style Portobello Mushroom Pizza-  Oh how I adore these!  Even the kids love them!  I usually add more of the spinach greens (and have been known to use bagged salad instead).  Another yummy addition is some sliced avocado on top!
Side Dishes
Bacon Wrapped Sesame Asparagus-  I used turkey bacon, and didn't have any sesame seeds on hand so left them off. It was still REALLY good! I cant wait to do it again with the seeds!!
"Boston Market" Cornbread - This is one of the few not-so-healthy recipes that I will endorse.  Here is the thing.  If you are going to eat cornbread... it needs to be GOOD cornbread.  And this stuff is sinfully good!  I served it alongside my Taco Chili during a dinner party that we had last December.  It was a HUGE hit... there was none left!  So, I say... GO FOR IT!  :)
Hasselback Potatoes-  I have made these a couple of times! LOVE THEM! And they are fun to eat. Make a cheesy cream sauce and pour over them and you have scalloped potatoes.

Snacks
Brown Bag Microwave Popcorn- This blew my mind!  Who knew that you could air pop popcorn in the microwave?!?  I gave up microwave popcorn some time ago.  I mean, really- even the light versions are pretty loaded.  I bought an air popper, but its a bit temperamental and it makes too much for one person.  This is the perfect solution!  You can quickly pop a single serving of popcorn IN the microwave without all the added fats and oils & chemicals that packaged microwave popcorn comes with.  PERFECT!
